Why This Knob Breaks

The steam knob gets twisted every time you steam milk, and it's doing that job mounted a few inches from the hottest part of the machine — heat cycling makes the plastic brittle over time, and the splined connection to the valve shaft is a thin-walled point that eventually cracks or strips under the twisting load. Once it's gone, you can't control the steam wand at all. DeLonghi doesn't sell the knob alone, so a cracked knob otherwise means buying from a parts reseller at a markup for a machine that's still perfectly good.
